Pickled Marsh Samphire and Sea Purslane
200g Apple cider vinegar or grape vinegar

The lemon trees are laden with fruit here at the moment. This was the perfect recipe to preserve the windfalls and continue the never ending battle with the lemons!
Its uses just 2 ingredients and is relatively easy to make. I really like the sharpness of this recipe as the jam lends itself to both sweet and savoury dishes. Having said that i'm enjoying it on toast with plenty of olive oil.

1.5kg lemons
1.5kg granulated sugar
Method:
200g Apple cider vinegar or grape vinegar
I'm so glad i was introduced to this recipe here in North Cyprus. It's the ultimate sunshine refreshment and i can never get enough of it.
Its that time of year again where i have more lemons then i can shake a stick at. Its a fantastic way to use up a glut of lemons or any citrus fruit.
