Sulu Muhallebi Recipe

I'm so glad i was introduced to this recipe here in North Cyprus. It's the ultimate sunshine refreshment and i can never get enough of it.

The trick is to get everything as cold as possible. I put the bowls or glasses and spoons in the freezer and make sure the water and rose syrup is really chilled too. 

Sulu Muhallebi Recipe (serves 4)

2 cups water 

2 tbsp cornflour 

Pinch sugar 

3 drops blossom water  

Rose syrup to taste

Lavender Lemonade (optional)

Ice cubes

Cold water to serve

Method

  1. Put the water, cornflour, sugar and blossom water in a pan. Whisk the ingredients together until silky smooth.
  2. Place the pan on a medium heat and bring to the boil whisking continuously. Simmer the thickened mixture for about 2 to 3 minutes until it becomes thick, glossy and translucent.
  3. Turn off the heat and pour into a dish lined with little splash of water. This will stop the mix from sticking. 
  4. Allow to cool to room temperature before placing the mix in the fridge for a couple of hours to chill and set into a jelly like slab.
  5. Remove the jelly from the fridge and cut into squares. Place a few of the squares into glasses or bowls. Add some ice cubes and drizzle generously with the rose syrup. Add a splash of water over the top to dilute the rose syrup and cover the jelly cubes. 
  6. Mix gently and enjoy!
